Abstract: This cookbook offers recipes for individuals concerned about lowering fat consumption, balancing their diet nutritionally, reducing the risk of particular health problems and improving general health. Recipes are included that are low in fat, high in complex carbohydrates, and containing moderate amounts of protein and sodium. Recipes for soups, salads, salad dressings, sauces, vegetables, meatless meals, poultry, fish, meat, grains, desserts and beverages are given. Included are hints for preparation, serving suggestions, nutritional information (including serving size, calories, fat, carbohydrate, protein, sodium, calcium, iron, dietary fiber, cholesterol and exchange information per portion), and preparation and cooking time. A four week menu plan is provided which features foods from the cookbook. The meal plan is calculated at dailly caloric levels of 1200, 1500, 1800 and 2100.
