In the production of beer, non-fermentable high molecular weight (1--> 3)-Beta-D-glucans from malt are waste materials which cause considerable filtration problems, increasing filtration times and blocking filter cakes. The solubilisation of the majority of these entrapped polysaccharides of the filter mat is described by utilising the digestive enzymes of the surf clam, Spisula solidissima. Laboratory studies indicate that this system has considerable potential for full-scale application.
